Mini Quiches

PhotobucketMini quiches are great warm or cold, and they’re really easy and quick to make. They’re the first thing I tend to think of when it comes to any ‘bring a plate’ type function, but they’re also really good for anything that calls for cocktail food.

There’s many, many variations on this theme. I tend to prefer the ham and cheese variety, but you could also leave out the ham, and add some finely grated onion, or thinly sliced shallots or spring onions for a vegetarian version. You could also do a two- or three-cheese version, by adding Edam, Parmesan, Mozzarella, Romano or whatever your favourite is. You could go gourmet and add a little piece of camembert with the ham, instead of the tasty cheese. You could use finely chopped pieces of chicken too. Honestly, you’re limited only by your imagination!
